It took me SO LONG to finally make broccoli fritters. Inspired by Smitten Kitchen (oh, I am an ardent fan of hers) and lightly adapted the recipe. The dipping sauce makes it deluxe, and ice cold radishes on a hot day are so cold and good. Here is your snacky little dinner tray and here is my recipe:
Easy Broccoli Fritters
Steam/microwave 1 large head (or 3-4 cups) *frozen or fresh broccoli for 5 minutes, roughly chop, add to a big mixing bowl
*one of my Costco staples: frozen organic broccoli, I steam it in the microwave in a lidded bowl with a big splash of water and a big pinch of salt to help the broccoli keeps its bright green color, 5-6 minutes on HIGH
Add to bowl of cooked, drained and chopped broccoli:
2 eggs
2/3 cup grated parmesan cheese
1/2 cup flour (all purpose, or use almond flour or your choice of flour)
4 cloves of chopped garlic or 1 T dried garlic powder
Salt + Pepper to taste
Cracked Red Pepper to taste
Oil to fry: I use Extra Virgin Olive Oil or *Avocado Oil
*another Costco staple
Mix the ingredients well.
Heat a large heavy skillet over medium heat (I use cast iron) with a nice pour of oil
Scoop 2 T of mixture, form into a tiny hockey-puck-sized fritter, place in pre-heated pan, press down with spatula
Cook 3 – 4 minutes on the first side, flip and cook 2 – 3 minutes more until golden brown and crispy on the edges
Dipping Sauce
1 cup of greek yogurt
juice and zest of 1 lemon
2 T garlic powder (do you love garlic? this can take 3 T)
2 T dill weed
Mix well
Another combination I will try next week is the same recipe but using cauliflower and feta cheese. My new question to ask any vegetable… will it fritter? I might change that dipping sauce and use basil instead of dill? You could also top this with a fried egg and really live it up!
Zester Recommendation
Do you already have a zester? No? Gosh this zester creates such a fine cloud of lemon flavor. I bet I use this every week… nothing better for citrus zest, which I consider a top-level flavor! Add some zest to your fritters, and basically to your life.
